Fully embracing the sunshine today with this Massaged Kale Watermelon salad! Yes, you read that correctly, MASSAGED kale. For most, kale isn’t exactly the go to green for enjoying raw in a salad. Kale is pretty well known for being tough…like leafy greens on steroids.
So how can you enjoy raw kale without blending it into a smoothie?? Thats where the massaging comes in! The massaging process physically breaks down the cell walls, which will make it more tender, vibrant, and easier to digest!

Massaged Kale Watermelon Salad
Ingredients
- 1 bunch of kale, de-stemmed
- 1.5 tbsp EVOO
- 2 cups chopped watermelon
- 1/4 cup feta cheese
Instructions
- De-stem kale leaves.
- In a large bowl, combine juice of 1 lemon and 1.5 Tbsp olive oil.
- Begin to massage and tear kale leaves to desired size.
- Add in 1-2 cups chopped watermelon and 1/4 cup feta cheese. Enjoy!
